From Popayán to your cup: the story behind our Colombia single origin

A journey to Popayán, Cauca, where small local farms grow the coffee that reaches Bridge stores roasted — at roughly 1,800m altitude.

Before it reaches your cup, every single origin has a journey — a place, people, an altitude, a process. Ours for Colombia starts in Popayán.

Popayán and the Cauca region

In southwestern Colombia, the Cauca region is known for its volcanic soils and cool microclimate — ideal for slow-ripening cherries. Our Colombia single origin is grown there, at roughly 1,800m, by small local farms.

Why altitude matters

The higher a coffee is grown, the more slowly its cherries ripen — and the more slowly they ripen, the more complex sugars they develop. That translates into cleaner sweetness and a more complex profile in the cup.

Washed process: clarity in the glass

After harvest, the cherries go through washed processing — the fruit and mucilage are removed before the beans dry. The result is a clean, clear cup that lets the region’s identity speak: dark chocolate, sweet dried fruit, notes of black tea.

From the farm to our Athens roastery

The beans travel green to our roastery in Athens, where they’re roasted to a carefully designed profile built to reveal that exact character — not hide it behind a heavy roast.
