Harvest

Harvesting happens at exactly the right point of ripeness — often by hand, cherry by cherry. Only the ripe fruit gives clean, sweet flavors.

Cherry · Processing

Every cherry — botanically a drupe — hides two seeds. Processing (washed, natural, or honey) is the bridge between terroir and cup: it can reveal a coffee’s character, or ruin it.

Roasting · Our Roastery

A roaster doesn’t create flavor — they reveal it. At first crack (~196°C) the development phase begins; precision in the Maillard reaction and DTR decides what reaches your cup.

Evaluation · SCA Cupping

Flavor,puttothetest.

Before it reaches a cup, every batch is scored against the SCA’s cupping protocol: fragrance/aroma, flavor, aftertaste, acidity, sweetness, body, and balance — on a /100 scale. Above 80 points, a coffee is classified specialty.

Grinding · The Mill

Just before extraction, the bean is ground to the right size. Fresh grinding releases the aromatics — it always happens at the very last moment.
