Chemex

The Chemex Coffeemaker is a glassware, invented by Peter Schlumbohm in 1941 and manufactured by Chemex Corporation in Chicopee, Massachusetts. It consists of a glass bottle in the shape of an hourglass with a conical neck that looks like a funnel and filters made of glued paper, which are thicker than the standard paper filters used in drip coffee machines.
The thicker Chemex filter paper removes a lot of coffee oils, making our cup much “cleaner” than other brewing methods.

Start heating water to a desired temperature of 92–96 ° C. Insert the appropriate Chemex filter into the pan by folding it with the manifold wall in the mouth. Wet the filter with warm water to remove the paper flavor and then carefully drain the water through a pan.
Weigh the desired amount of coffee (6 g per 100 ml) and grind to a medium to thick setting. Place the utensil on the scales, add the ground coffee and shake slightly left and right to create a uniform surface on the grind. Start the extraction by adding a small amount of water (about twice as much as you have weighed your coffee) and wait for about 30 ”. Then gradually add, every 30 ”, the amount of water until you reach the desired amount.
In about 3:30-4:30 minutes the brewing should be complete. When it’s done remove the filter, make a couple of turns of the pan for even mixing and serve. Enjoy!
