Espresso, tonic, ice — three ingredients, one fresh, lightly bitter drink that’s taken over the last few summers.
Ingredients (for 1 glass)
1 shot of espresso (30ml), 120–150ml tonic water at fridge temperature, plenty of ice, optionally a slice of orange or lime.
Steps
Fill a tall glass with ice to the top — the more ice, the more slowly the drink dilutes.
Add the tonic, leaving about 2cm of space from the rim of the glass.
Pull the espresso fresh and pour it slowly on top, without stirring — its weight will carry it down naturally, creating layers.
Our tip
Pick a tonic that isn’t too sweet, with a clean bitterness — it balances better with an espresso that has bright, fruity acidity than with a heavy, chocolatey blend.
